(Topping)
1/4 c butter/margarine
2/3 c brown sugar
5 or 6 Pineapple
9 cherries
(Batter)
1 c sugar
1/2 c Shortening
2 eggs
1 tsp Vanilla
2 c flour
1 1/2 tsp baking powder
1/2 c milk
1/8 tsp of Salt
Firstly, preheat oven to 350 degrees. While it is preheating, melt in an 8 x 8 or 9 x 9 pan the 1/4 c butter/margarine. Once all of the butter is melted, add brown sugar and stir until well blended. Arrange the pineapple slices or crushed pineapple and add cherries. Set aside. In a medium mixing bowl, cream shortening, vanilla and sugar together. Add eggs, one at a time, and beat until light. In a separate small mixing bowl, combine flour, salt and baking powder together. Add the flour mixture to the creamed mixture alternatively with the milk. Mix until well blended. Pour batter over fruit and bake for 45 - 50 minutes or until toothpick/ knife comes out of center clean. Invert pan on large serving plate. Best if served warm!
